Company Chicken Breasts

Ingredients
4 double chicken breast (split, boned, and skinned)
1/4cup butter, softened
1 3-ounce package cream cheese, softened
1/4 tsp. salt
1/2 tsp. minced onions (instant)
salad herbs to taste
lemon-pepper seasoning to taste
2 eggs
1 T. cold water
1/2 tsp. salt
1/4 cup flour
1 cup bread crumbs
shortening

Directions
1. Flatten chicken breasts between waz paper.
2. Cream cheese, butter, salt, minced onions, salad herbs, and lemon-pepper together and refrigerate.
3. After chilling, divide into the 8 breasts.  Roll up, fasten with toothpicks.
4. Mix the eggs, 1/2 tsp. salt and 1 T. cold water.
5. Dip the chicken into flour, then the egg mixture, then bread crumbs.  Coat well.  At this point you may refrigerate for use later in the day.
6. In electric fry pan brown rolls in shortening at 370-degrees until golden brown on all sides.  Drain on paper towels.

Notes
This time consuming recipe is the closest thing I have found to my mother's amazing chicken that she always made for company.  It was my favorite meal as a child.  The only thing missing is the incredible sauce she used.
