Chicken & Rice Soup

Ingredients
1 chicken breast, cooked and cubed
2 tablespoons butter
1/2 onion, diced
1 garlic clove, diced
4 cups water
4 chicken boullions
1 bay leaf
basil to taste
pepper to taste

Directions
1. Melt butter in a large pot. Saute onions and garlic in butter until translucent.
2. Add water, boullions, chicken, and spices. Bring to a boil.
3. Add rice and reduce heat until the soup is just simmering. Cook for 15 minutes more.
4. Remove bay leaf and enjoy.

Notes
I made this yummy soup last night to go with some homemade wheat bread.  It couldn't have been a meal on its own but it was so flavourful and the bread helped fill me up the rest of the way.
