Stuffed Spaghetti Squash

Ingredients
1 medium-sized spaghetti squash
1/2 lb Italian sausage
1 cup favorite spaghetti sauce
1 cup parmesan cheese

Directions
1. Cut squash in half lengthwise. Remove seeds. Cover halves with saran wrap and poke holes in the wrap. Microwave halves on high for 8 minutes.
2. Meanwhile, brown sausage in a large pot. When cooked, stir in spaghetti sauce.
3. Scrape flesh out of the cooked squash and add to sausage mixture. Mix well.
4. Spoon squash and sausage mixture back into the skins. Top with parmesan cheese.
5. Bake in 350-degree oven for 30 minutes.

Notes
This recipe makes a dish very similar to spaghetti. The cool thing about it is not the taste, which could be accomplished much easier with pasta, but novelty of it. You wouldn't even know you were eating a vegetable if you hadn't prepared it yourself!
