Lentils & Chicken

Ingredients
2 tablespoons olive oil
1 lb chicken breasts, cut into cubes
1 cup lentils
3 1/2 cups water
2 cloves garlic, crushed
1 teaspoon oregano
1 teaspoon dill
1/2 cup Parmesan cheese
1 cup plain yoghurt

Directions
1. Brown chicken cubes in oil. Set aside.
2. Place the lentils in a pot with water, garlic, oregano, and dill. Bring the water to a boil, then turn down and simmer for 30-45 minutes, until the lentils are tender but not mushy.
3. Place the chicken pieces in a small casserole dish and pour the lentil mixture over them. Top with Parmesan cheese.
4. Bake, covered with foil, in 350-degree oven for 30 minutes.
5. Serve with yoghurt.

Notes
This is a favorite in our family. We eat it two or three times a month. It takes some getting used to but after a few servings, you'll be hooked too.
