Pao de Queijo

Ingredients
1 egg
1/3 cup olive oil
2/3 cup milk
1-1/2 cups tapioca flour
1/4 cup cheddar cheese
1/4 cup parmesan cheese
1 teaspoon salt

Directions
1. Preheat oven to 400 degrees F.  Grease mini-muffin tins.
2. Combine all ingredients in a blender and pulse until smooth.
3. Bake for 15-20 minutes, until puffy and lightly browned.

Notes
These tiny breads and gluten free and so yummy!  I made them with soup when my father-in-law came for dinner.  Soren and Carl loved them; the texture was a bit too chewy for Sven.
