Mediterranean Couscous Salad

Ingredients
1 cup chicken broth
3/4 cup cooked couscous
1/2 cup grape tomatoes, cut in half
1/4 cup cucumbers, diced
1/4 cup olives
1/4 cup green onions
2 Tablespoons lemon juice
2 Tablespoons olive oil
4 ounces crumbled feta cheese

Directions
1. In a saucepan, heat broth to boiling.  Stir in couscous; remove from heat . Cover and let stand for 5 minutes.
2. In large bowl, place tomatoes, cucumbers, olives, and green onions.  Stir in couscous.
3. Pour lemon juice and olive oil over couscous mixture.  Stir, cover, and refrigerate for one hour so flavors can blend.
4. Just before serving, sprinkle with feta cheese.
