Vegetable Soup

Ingredients
4 carrots, chopped
5 stalks of celery, chopped
1 leek, chopped
1 head of broccoli, chopped
1 zucchini, sliced
2 cups mushrooms, sliced
1/2 onion, diced
1 sarano chili pepper, diced
1/2 Tbsp curry powder
4 tsp beef bouillon
8 cups water

Directions
1. Combine ingredients in a big pot. Boil until carrots are soft.

Notes
Obviously, this soup can be edited any number of ways. The recipe you see here has already been adapted from the original to fit our family's tastes. It has plenty of flavor though, which is surprising from a no-tomato vegetable soup. Tastes great topped with mozzarella cheese and served with fresh bread. For a vegetarian/vegan option, make with vegetable stock.
