Spicy Chicken Soup

Ingredients
4 cups water
4 chicken breast halves, cubed
1/4 teaspoon salt
1/2 teaspoon ground black pepper
1 teaspoon diced garlic
1 tablespoons dried parsley

4 cubes chicken bouillon
2 tablespoons olive oil
1/2 onion, chopped
1/2 jar chunky salsa
1 can peeled and diced tomatoes
1 can condensed tomato soup
3 tablespoons chili powder
1 can whole kernel corn
1 can kidney beans
1/2 container sour cream


Directions
1. In a large pot over medium heat, combine water, chicken, salt, pepper, garlic powder, parsley, onion powder and bouillon cubes. Bring to a boil, then reduce heat and simmer 1 hour, or until chicken juices run clear.
2. Saute onion in olive oil until slightly browned. Stir in salsa, diced tomatoes, whole tomatoes, tomato soup, chili powder, corn, kidney beans, sour cream, and chicken with broth. Simmer 30 minutes. 

Notes
It's been a few weeks since I made this so I'm not sure if this is exactly the way I did it.  But it was pretty good and I'm sure I'll be making it again sometime.  When I do, I'll modify the recipe again.
