Split Pea Soup

Ingredients
2-1/4 cups dried split peas (1 package)
2 quarts cold water
1 ham bone
1 onion, diced
1 teaspoon garlic, minced
2 stalks celery, chopped
2 carrots, chopped

Directions
1. In a large stock pot, cover peas with 2 quarts cold water and soak overnight.
2. Once peas are soaked, add ham bone, onion, and garlic.  Bring to a boil, then simmer for 1-1/2 hours, stirring occasionally.
3. Remove bone.  Cut off meat, dice and return to soup.  Add celery and carrots. Cook slowly, uncovered for 30 to 40 minutes, or until vegetables are tender.

Notes
This soup makes leftovers better than the original ham.  We look forward to eating it post-Easter and anytime we can get a friend or neighbor to part with their leftover ham bone.
