Key Lime Cupcakes

Ingredients:

CUPCAKES
1 cup all-purpose flour
3/4 cup self-rising flour
1 stick butter (room temperature)
1-1/4 sugar
2 eggs
2-1/2 tbsp lime juice
Grated lime zest
3/4 cup buttermilk

FROSTING
4 ounces cream cheese (room temperature)
3/4 cup powdered sugar
1/2 stick of butter
1/2 tsp vanilla extract
Grated lime zest

Directions:
1. Preheat oven to 350-degrees. Line standard muffin pan with 12 paper cupcake liners.
2. Whisk flours together in a medium bowl. Beat butter in a large bowl until smooth. Add sugar and beat until smooth. Aii eggs one at a time, then lime juice and lime zest. Beat in flour in 3 additions alternately with buttermilk in 2 additions.
3. Spoon scant 1/3 cup of mixture into each liner.
4. Bake 20 - 25 minutes. Remove from pan after 10 minutes.
5. Meanwhile, whip frosting ingredients together until smooth. Frost when cupcaks are completely cooled.

Notes:
I used a key lime juice instead of just lime, to great effect. The cupcakes were a huge success but I think that I would have preferred a lime frosting and vanilla cupcake.
